Try these hidden veggie beef tacos for the picky eater in your house! No one will know their tacos are filled with nutrition.
Fortunately my kids have always been great eaters! These two have always enjoyed getting their fill of veggies straight from the gardens. They love these hidden veggie beef tacos, but also love piling the fresh toppings on top too!
My husband, on the other hand, didn’t come into our marriage liking any veggies! He did start a garden our first year of marriage, and quickly began eating more and more veggies from the variety he grew.
Even though we don’t have to hide much in our house, I still enjoy cooking with hidden veggies to pack as many vitamins and minerals into our meals as I can.
Gather your tools and ingredients.

Tools: (always use stainless, glass, and wood when possible)
- grater
- cutting board
- sharp knife
- large wooden spoon
- stainless skillet
- set of dry measuring cups
Ingredients: (always use organic and local ingredients when possible)
- 1 Tbsp ghee
- 2 small zucchini (grated)
- 1 green pepper (diced)
- 1 onion (diced)
- 2 cups tomatoes (diced)
- 6 cloves garlic (pressed)
- 2 pounds ground beef
- 1/2 cup taco seasoning
Optional Recipe Variations:
- If you don’t have any veggies, just use the ground beef and taco seasoning. Just add 1/3 cup water or broth to the mix when adding the seasoning.
- Add more or less of the veggies listed in the recipe.
- Use your favorite veggies or whatever you have on hand.
- Make it vegan by removing the ground beef and subbing coconut oil for the ghee.
- Save time by dicing and freezing veggies to use instead of using fresh.
- Cook larger portions and freeze the taco meat. Throw it in your slow cooker on those busy days.
- Mix your own taco seasoning instead of buying pre-made to avoid fillers.
How to make hidden veggie beef tacos:
Step one:
Place ghee, onions, peppers, tomatoes, and zuchinni in the skillet and sautée over medium heat until softened.
Step two:
After the veggies have softened, continue to cook until only a small amount of liquid remains (about 20 minutes if using frozen veggies). Add in the garlic and stir to combine.
Step three:
Add the ground beef to the skillet with all of the veggies after the garlic is combined.
Step four:
Brown the ground beef until no longer pink and cooked through.
Step five:
Add the taco seasoning to the skillet with the veggies and ground beef and simmer for five minutes.
Step six:
Serve your hidden veggie beef taco mix straight out of the skillet or a bowl of your choice.
Serving Suggestion for hidden veggie beef tacos for the picky eater:
Serve your taco meat with sourdough tortillas, chips and salsa, cilantro rice, a margarita, and your favorite toppings such as olives, tomatoes, lettuce, cilantro, jalapeños, cheese, sour cream, and avocado!

- 2 lbs ground beef
- 1/2 cup taco seasoning
Instructions
- Place ghee, onions, peppers, tomatoes, and zuchinni in the skillet and sautée over medium heat until softened.
- After the veggies have softened, continue to cook until only a small amount of liquid remains (about 20 minutes if using frozen veggies). Add in the garlic and stir to combine.
