Jump to RecipeThere are many reasons to make your own sourdough discard tortillas at home. One of the most important reasons to me is to avoid the unnecessary fillers and preservatives found in store bought tortillas.
These ingredients can cause inflammation and other health issues that are easy to avoid by cooking from-scratch at home.
If you are new to cooking from-scratch, try setting aside some time on the weekend to practice. Many from-scratch foods are easy to make ahead of time and store in the freezer until ready to use.
Let’s get started!
Gather your tools and ingredients:
Tools:
- medium glass bowl
- small glass bowl
- set of measuring spoons
- set of measuring cups
- large wooden spoon
- metal spatula
- 10.5 inch cast iron griddle
- large wooden rolling pin
- Dough Scraper
- large plate
- large kitchen towel
Ingredients:
- 3/4 cup water
- 1/2 cup sourdough discard
- 3 cups all- purpose flour
- 1 tsp sea salt
- 1 tsp baking soda
- 3 Tbsp melted butter
- 1 Tbsp all-purpose flour (for rolling out the tortillas)
How to make the best sourdough discard tortillas:
Step 1:
Combine the water and sourdough discard together in small glass bowl and stir until well combined.
Step 2:
Combine the 3 cups of flour, salt and baking powder in the medium glass bowl and whisk until combined.
Step 3:
Pour the melted butter over the top of the dry ingredients in the medium bowl, and stir with wooden spoon to incorporate until all large clumps have disappeared. you may use your hands in this process if you wish.
Step 4:
Pour the liquid mixture from the small bowl into the dry ingredients of the medium bowl and combine with the wooden spoon. Once hard to stir, use your hands to continue combining all of the ingredients until well combined.
Step 5:
Place the dough either on the counter or in a bowl, covered with a towel or lid, and let rest for at least 30 minutes, or up to 24 hours in the fridge.
Step 6:
After the rest period, remove the dough and divide it into 16 equal pieces using a Dough Scraper. Roll each piece into a ball and place on the counter, cover with a towel, and let rest for 30 minutes.
Step 7:
After the rest period, preheat your cast iron griddle over medium-low heat until the pan is hot.
Step 8:
While the griddle is pre-heating, lightly flour your work space and rolling pin with additional Tbsp of flour.
Step 9:
Begin rolling out the dough balls one at a time into a thin, round shape about 6 inches in diameter. Use additional flour if sticking occurs.
Step 10:
Place the dough onto the hot griddle, one at a time. Allow to cook until bubbles begin to form and the underside is starting to brown just slightly. Flip the tortilla and do the same for the second side.
Step 11:
Place a large kitchen towel on a plate in a manner that the tortillas can be placed inside the folded towel. Once your tortilla is cooked, remove it from the griddle and place inside the towel to stay warm until serving.
Step 12:
Repeat the process for all of the tortillas, and ENJOY with your favorite toppings!
Tips for your sourdough discard tortillas:
- Store leftovers in an airtight container on your counter for up to four days for best freshness.
- Freeze leftover tortillas by allowing them to cool completely, placing parchment paper between each tortilla, and storing in a freezer safe container.
- To eat leftovers, let thaw and re-warm on your cast iron griddle.
